Hi! I was just wondering there are so many types of cooking oil. For me, i use olive oil most of the time.
There is another forum that i am in and at times it was suggested to use corn oil, sometimes, peanut oil, or olive oil. What's the difference? How do you determine what type of oil you use for which type of cooking?

Min This is what I got from my "Bible": For deep-frying, use oils with high smoking point and flavourless eg. peanut oil, olive oil. For salad dressing, use flavoured oils but not too strong. Strong extra virgin oil might overwhelm the salad. Apparently corn oil have strong flavour which is unpleasant when it is cold. Like you, I also always have at least a bottle of virgin oil in my pantry. I use the extra virgin one for salad dressing, and the virgin one for cooking. But because they are expensive, I don't use them for deep-frying. Gosh... my deep fryer needs min. 3 litres of oil . I use mainly vegetable oil or peanut oil for that. According to my "bible", peanut oil is better because it has high smoking point. Anyway, certain chinese food like char kway teow taste nicer with pork lard, don't you think?

Janny, thanks for your informative reply. No doubt that char kway teow tastes better with lard but it's something i am not using at home. I know the supermarkets here sell lard in a block like butter. Was tempted to try but decided not to as it's very fattening! ;D

at home i used olive oil for stri fry thing and used canola oli for deep fry cooking. canola oli is good ones for deep fry because canola oli have no colestrol.
