10 plain biscuits (such as Nice) 125g butter. softened 1/2 cup caster sugar 1/3 cup orange juice or sweet sherry 1/2 cup sultanas 2 tbsp desiccated coconut 2 tbsp cocoa powder 1/2 cup desiccated coconut, extra
1. Roughly break biscuits and place in a zip-lock bag or large plastic bag secured with a rubber band. Place on a flat surface. Use a rolling pin, gently smash and roll over biscuits till crushed to fine crumbs. 2. Using an electric mixer, cream butter and sugar in a large bowl until pale. Add biscuit crumbs, oragne juice, sultanas coconut and cocoa. Stir until well combined. Cover with a plastic wrap. Place in fridge for 30 minutes or until mixture is firm enough to roll. 3. Place extra coconut on a plate. Using 2 teaspoonfuls of mixture at a time, roll into small balls. Roll balls in coconut and place on a large plate. Cover and refrigerate for at least 2 hours or until firm. 4. Place in a box or cellophane bag and decorate it. This can be given as presents.
