1. Eat mango on its own and by yourself. Eat it any way you like. Suck the pip clean.
2. Blend mango, thick yoghurt, strawberries and a few pistachio nuts for a lassi.
3. A cool salad for hot nights - cook soba noodles for four minutes, stir through rocket leaves, add fresh mango slices, sprinkle with roughly crushed macadamias and dizzle with a dressing of lime juice, 2 tbsp rice vinegar, 1/2 tsp chilli powder or a few chilli flakes and 2 tsp brown sugar.
4. Make a fruit salad of mango strips, star fruit, raspberries, grapes and King Island cream, and top with passionfruit pulp.
5. Pour pureed mango over sticky white rice balls or rice pudding.

not 5 just one..
this is from Auntie Noi at the AG Home for Troubled Teens. Its great with mango which have prematurely fallen from the mango tree but not ripe.
She would sliced them thinly, add chilli powder and sugar and leave it in the fridge to marinate for 2 hours.
then eat it as a spicy cold appetizer.
i had some on Monday after my cooking class. Very nice.
