I love this dish called Telor Balado (Eggs in Spicy Sauce), once I made it but had a hard time deep frying the boiled eggs. They were splattering all over the place. The result was the eggs shrank & also kinda broken up. Is there any tips on deep frying hard boiled eggs? Help!

The way I do it is, after the eggs are boiled and deshelled and wiped dry, i use a fork to poke it repeatedly all around then deep fry the eggs in hot oi. That way you will get crunchier skin, too.
Apart from for making telur balado, you can use the fried boiled egg for making curry eggs also.

Thanks for the tip Janny, me also sometimes fry my egg but usually not very crispy.
