Hi tt, the chinese words = super grade medium gluten/protein flour, no mentioning of pau. It's all purpose flour.

The grocery store keeper here once tried to persuade me not to buy vietnamese pao premix. He said it is the same using plain flour (all purpose flour) ;D

Yup, that's all purpose flour cause I just bought the same brand low gluten flour, which I assume is cake flour. The high gluten one would be bread flour I guess, correct me if I'm wrong.

i have bought a pack of flour quite similar or the same pix like yours but mine said 'weak flour' so i presume weak flour has less gluten + cake flour therefore good for pau. I thought you could get cake flour for only 29 cents, use that for pau. all cake flour are bleached and will be white

thanks for the translation lily, yeah, cake flour is cheap and they make very white and soft paus. I just wanted to make paus with pau flour to see if there's any difference. Janny, vietnamese premixed pau flour is really just "modified" self-rising flour.
