Talking about tofu fah, somebody e-mail me to ask the way to make homemade tofu (not fah). Would like to hear your opinion of using gypsum in tofu making. Most people have concern on gypsum in tofu fah but not on tofu Can I used lactone or other coagulant agents to substitute gypsum in tofu making Saw people using nigari for making tofu too. Is nigari = gypsum?

Just found this:
calcium sulfate = gypsum and magnesium chloride = nigari
Both are coagulant for tofu

food grade gypsum = edible terra alba = calsium sulfate also, i found this on the egullet forum: nigari or —°Ž_ƒ}ƒOƒlƒVƒEƒ€@magnesium su‚Œfate or ‰–‰»ƒJƒ‹ƒVƒEƒ€ calcium chloride confusing huh.
apparently the english name of nigari is bittern

Baked this swiss roll using Jo's recipe with the help of Lily on the weekend. Turned out very nicely. Last night I baked these biscuits and it seems they expand quite a bit, so the fork pressed pattern is not there and the biscuits look cracked Wonder if my oven is too hot?

Nora. It is called quick cookies . And very quick to make too . Got the recipe from Super Food Idea, an australian food magazine. I must say it taste very nice. I was only disappointed the pattern sort of got lost. I will try again baking it at lower temperature and see how.

Janny, Is that a special pan for pizza. Your pizza looks like the ones by Pizza Hut. The spareribs recipe is not up yet. Was trying to write yesterdy but my brain was running out of vocab Not sure what happened to me. The recipe is actually simple but yet....

Janny, Is that a special pan for pizza. Yes. Like a round metal biscuit tray but with holes. Actually I read that pizza stones are better to get more even and crisper pizza base. But this one will do for me as I don't make pizza that often
